put the filled dishes in a roasting pan, fill pan 1/2 - 2/3 of the way up with boiling water. i add the water when the pan is on the shelf so i don't have to carry it that way and pull out the dishes directly from the oven and allow roasting pan to cool before moving it.

Use a pan with sides, put containers of creme brulee in the pan and fill the pan with water within 1/4" of top, put in oven and cook per directions in the recipe

Bring a pot of water to boil. Place ramekins in a baking dish and pour the hot water in the pan to halfway up the ramekin, pop in the oven and bake.

very simple, simply put your ramekins of creme in a dish that is as deep as they are and fill with water halfway full.
Then bake.
