There is a Peruvian dish known as Cebiche (sometimes called Ceviche) which is raw (usually white) wish that is marinated for about ten minutes or less in a mixture of lime juice (Peruvians call lime limon) and chilli.
It's very nice when made with really fresh fish, but I would recomend going to Peru by the coast to try it cos they can make it better thatn my efforts.

Typically raw fish that is soaked in lemon juice is called Ceviche. The acid in the lemons is what cooks the fish. This is quite popular in latin america.

Ceviche is usually a white fish, that's cured by the acid in the lime juice. It's often jarred, and sometimes spices or onions or garlic, and olive oil are added.

Herring! I think!!!! I know there is pickled herring not sure about the lemon juice! You can use lemon juice with alot of fish recipes!
