I'm wanting to make something the includes ground beef but nothing heavy like spaghetti...something light...and good.. Any suggestions?

I always make chili or burgers. Go to allrecipes.com. There's a section where you can enter what you have and they'll bring up all the possible recipes containing that ingredient.

Cheeseburger Casserole

1# ground beef
1 can cream of mushroom soup
1 can cheddar cheese soup
Crinkle cut frozen french fries

Brown and drain the ground beef, add the two cans of soup. Put into a greased 9 X 13 pan, top with the frozen french fries. Bake at 350 degrees for about 40 minutes. You can put under the broiler to make the fries more crunchy! Sometimes I brown onion with the ground beef.

I like this because it only has 4 ingredients, and are things I usually have on hand.

Vegetable Beef Chunky Soup

Yields: 6 servings
"Any person can make this savory soup with vegetable juice cocktail, potatoes and onion. Use frozen or canned mixed vegetables."
INGREDIENTS:
1 1/2 pounds lean ground beef
1 (46 fluid ounce) can tomato-
vegetable juice cocktail
1 onion, diced

4 potato, diced
1 (16 ounce) package frozen
mixed vegetables
salt and pepper to taste
DIRECTIONS:
1. In a large saucepan or stockpot, brown and drain ground beef. Add juice, onion, potatoes, and mixed vegetables. Bring to a boil and let simmer until potatoes are tender. Season with salt and pepper to taste.

Make a Pakistani dish called Qeema(minced meat)
Ground the beef in a processor.
Fry in a olive oil(4tbsp)for 1/2 kg of beef with browned onions(2)
Add salt 1/2 tsp, red chillies1/2 tsp, turmeric powder1/4 tsp, all spice powder 1/2 tsp.Add chopped tomatoes(2) or tomato paste(1/4 cup)Add a cup of water and cook till it thickens.
Serve with corriander, cilatro leaves and chopped green chillies.
Eat with pita bread.

Make stroganoff. Brown the meat with onions, add a hint of nutmeg, then add a can of condensed mushroom soup (with water or milk per directions) and some sliced fresh mushrooms. Cook till the sauce starts to bubble and then add frozen peas. Serve over egg noodles ( you can use the yolk-less or regular). This is really light. For an additional touch, sprinkle with paprika.

Go to frozen foods and buy Goya disc. cook your ground beef,drain, add a couple teaspoons on top with alittle cheese. Close or fold disc over and seal edges by smooshing together with fork. Cook in hot oil turning about 21/2 minutes. Great snacks for later too.

Cabbage Roll casserole. Fry up your ground beef and white rice, put on the bottom of a casserole dish. Grate green cabbage, put on top of the ground beef, 2 cans of diced tomatoes. Bake at 400 fehr for 45 mins.

My kids love my Taco Salad.

1 bag of Doritos, nacho flavored chips ... crumbled
1 head of Lettuce ... sliced
2 tomatoes ... diced
1 lb. lean ground beef ... fried and drained
1 pkg. taco seasoning
500 ml fat free sour cream
Sm jar of salsa sauce
Grated chedder cheese

Stir taco seasoning into ground beef and follow directions on package. Mix all ingredients together ... really tasty, tastes exactly like a taco .. without all the mess in tryin' to eat it.

I always make chili with it.

Add a cup of tomato sauce and a coup of water
Add tomatoes, beans, and chilis. i like to use chili powder instead
I also like to add a few tablespoons of brown sugar and some cheddar cheese.
Bring it to a boil then simmer for 1 hour.
