I would just go with a floral arrangement in a low bowl or platter--you can find pretty ones at antique stores/flea markets/thrift stores--just look around. A cool thing I've seen with candles is to set them on mirrors to reflect the light, but that would depend on how that would look with the rest of your room. Good luck.

-Get some long rectangular trays in whatever base will go with your theme (clear glass, plastic, silver, brass....)
-You can use whatever of these you'd prefer:
white pebble stone, natural river stones, teal glass florist marbles, or they also make them in a gold/yellow tone.
-Get 3 pillar candles per tray so that you have 1 tall for center and 2 lower ones on the ends...or you can use the shaped (square or ball) all 3 in the same size.
Space your 3 candles of choice on the tray leaving room between them, pour a single layer of your "stone" of choice to fill bottom of tray.
Alternate your colors from table to table to oppose the color of runner on the table. (yellow runner=blue stones w/white candles)
To add a little "life" to your centerpieces, tuck in a few flowers like daisies or roses (whatever suits the "feel" of your theme better) If the trays' sides are deep enough, you may be able to add a little water to help the flowers live longer. If you don't want to use flowers and you're using candles that can support a ribbon, simply tie an organza bow around the base of your center candle and let the streamers lay loose around the bottom.
These are very easy, but they look very elegant and are nice and low so that your guests can see over them.

How about a low fish bowl, w/fish and floating a candle on top? How about bowl with heads of flowers floating? You could use clear, plastic plant holders and use hydrangeas, azaleas, etc. Another idea is to google images and type in wedding centerpieces. They have lots to look at. How about low square vases with roses. I like the low centerpiece idea as well b/c that way the guests can see over them and they are not in the way. Ikea and Michael's sell the vases for $3 each and Costo sells roses for $12.99 per 2 dozen. You can fit about 1-1.5 dozen in each vase. The problem with floating candles is that they tend to float to the side of the bowl and stay there rather than float in the middle like you imagine. I used glass bowls with a votive cup in the middle with the irredescent easter grass around the votive cup and the candle picked up all the colors in the grass and it spread the colors out onto the tables. It looked really pretty. I like your idea about low centerpieces that way people can see over them.
