I usually put in a slice of bread or an apple slice and seal the bag. Within a day or so, the sugar should be soft again.

The slice of plain white bread works great. I have done this many times. Just close the sugar back up with it in there. Oddly enough the bread gets hard and the sugar gets soft again.

This has always worked like a charm for me: Put the brown sugar in a microwave-safe bowl with a slice or two of apple (any kind of apple will do), cover the bowl with Saran Wrap, and microwave on high for 20-30 seconds. Steam from the apple will soften the sugar.

I use this trick, get some paper towel and wet the paper towel, squeeze out excess water. Wrap the sugar in the damp paper towel and put the sugar in a microwave safe and put in the microwave. Put the microwave on low and heat for a few minutes. It should soften and be ready to use. The dampness is absorbed into the hard sugar and it softens it. The taste is not altered.

Brown sugar is hard to store as it gets humid inmediately.
as you have to preheat your oven for the cake, put the sugar in an oven plate as much sparkled as possible and place in the oven at very low temperature for some minutes until it starts drying again. then with your hands you can press it a little bit to brake all remaining hardened parts, but the sugar will be dry again. or after the oven you can put it in a food processor to brake the hard parts back again to normal.

To make the sugar soft again put a piece of end bread in it and close it tightly. It will definitely soften up for you.

There is a thing you can buy (probably at the grocery store), I cant remember what they are called but it looks like a hockey puck. You put it in your brown sugar and it stops it from going hard.

I have a little sun which is about size of a half dollar which is made out of terra cotta. It works wonderful, they are called Brown Sugar Discs. I got mine from Miles Kimball. Heres the best part only 2.59.

They sell these "terra cotta" little medallion things that go in your brown sugar to keep it from drying out. You soak them in water and then place them in the container with your brown sugar and it will never go hard again! However, once it's hard, I don't know for sure how to soften it. Just wanted to pass on the terra cotta thingy to ya :)

Try keeping an apple in with it, making sure of course that you don't leave it in there long enough to rot an ruin you sugar. This may provide enough moisture to keep it grainy. If not, maybe an air-tight storage container will help.
