harbs n seasoning like any garlic or onion and herbs like cilantro or celery or bellpepper doesnt reall count as they aer not veggies but flavoring, to me :D

Okra is the biggie here. But first you use the "holy trinity" in making your stuff....which includes green pepper, onion, and garlic (in some places) or green pepper, celery, carrot (in others) or green pepper, celery, carrot and onion (in yet others). Okra is the biggie though and should be added at the end of your cooking.

The holy trinity of cuisine are the three ingredients key to a particular cuisine. The term is most commonly used in reference to Louisiana Creole and Cajun cuisine, where the trinity is chopped celery, bell peppers, and onions. And this being gumbo also add okra.
