By far, the best and simplest drink that fits your description is the classic dry martini made with gin. It only has two ingredients. I recommend the Sapphire, and don't forget an olive, it really adds a nice touch. A cocktail onion on the bottom will also work.

Vodka and cranberry - sea breeze
Rum and coke -
Coconut rum and 1/2 & 1/2 (or milk if you prefer)
vodka, 1/2 & 1/2 and chocolate sauce - chocolate martinis
vodka, cranberry, pineapple juice - bay breeze
just a couple off the top of my head that i like.

Captain Morgans' Spiced Rum and Coke.
1 part rum to 3 parts Coke, on the rocks.

Seriously, give this a shot. 2 ingredients, will knock you on your butt because they mix so well together...
cranberry juice with a good cranberry vodka... like stoli....you can make them super strong and hardly taste the liquor!

jungle juice- pick your favorite kool-aid and vodka, with sugar to sweeten it to your taste; it can't get no easier than that..
a fresh fruit daquri- pick your fave fruit-fresh or frozen (if frozen you don't have to use a lot of ice or any at all), bacardi rum, and ice
