The word lean in lean meant has the same meaning as when it used in calling somebody lean. It means that there is very little fat. Typically white meat, this can include chicken, turkey, pork, and fish. Lean beef just means less fat than regular beef, it is not very lean in the long run. You cannot go to the store and ask for a pound of lean meat from the butcher. Well, you could, but who knows what you would be bringing home.

Lean meat just means that it's a leaner cut of whatever meat you are buying. Lean being a cut of meat that is lower in fat. If you are talking about lean ground beef then it's beef. An example of a lean cut of pork would be a pork loin. Chicken breast without the skin is a lean cut of meat.

The modern trend for extra lean meat, particularly beef and pork, have seen great changes in the dominant breeds used in the UK. For example, Continental breeds now dominate the national beef herd.


Beef – silverside, topside, top rump

Topside and top rump are very lean cuts of beef for slow roasting. Either is best served rare or medium rare carved into large, thin slices, something easy to do as there are no bones. Silverside and, again, top rump are both good for pot roasting, too. The principle of pot roasting is long, slow cooking of the meat in a fairly heavy cooking pot (with a tight-fitting lid) in a small amount of liquid which can be stock, wine or cider. This creates a steamy atmosphere inside the closed pot, which keeps the joint moist as it cooks. Herbs and vegetables may be added too, and sometimes the meat is marinated first. The finished dish should be very tender and succulent


Pork

Pork – leg
Leg of pork is the most popular roasting joint, but because of its size it mostly has to be sold in two, or else boned and rolled without the knuckle. This cut promises the most lean meat and lots of crunchy crackling but not, I think, such a sweet flavour as other cuts of pork.

Pork loin and chops
Loin of pork is a prime roasting joint (and the best one for lots of crackling), equivalent in the anatomy of the animal to the sirloin and ribs of beef. This is best bought on the bone, but the butcher must chine it for you – that is, loosen the bone yet leave it attached so it can easily be cut away before carving. The best pork chops come from the hind loin.

Pork – ribs
Spare rib is sometimes sold as individual chops. It is actually the collar of the animal and, when roasted, is full of flavour. It is a great bargain price cut for barbequing or roasting in a piquant, spicy sauce.

Pork fillet or tenderloin
This delightfully quick-cooking lean cut comes from the animal's lower back. It is perfect for making a very fast luxury meal.

Um, it could be either. Lean beef or pork just means it doesn't have a lot of fat in it, and might have come from a less fatty cut of the hog or cow, or the meat was trimmed of fat first. Unless you get sausage, beef and pork are two separate meats.

Hey mate Lean is what it says Lean no fat, wether it be pork or beef or any meat including humans we are all made up with Lean meat surrounded by muscle and fat.

Pork and Beef are meats. Lean meat can be pork or beef with most of the fat cut off.
'Lean' means... meat with little or no fatty tissue.

All meat is lean, if it hasn't got loads of fat on. Beef does tend to be leaner than pork, the cuts aren't as fatty
