Pasta with Sausage and Kale:
Kale has a mild cabbage-like flavor that's nice with sausage. To save a few minutes on the cook time, use spinach, which does not require steaming. Cook pasta, chop onion, and toast pine nuts the day before. Rinse pasta with cold water to wash away starches that cause sticking, and refrigerate in a zip-top plastic bag.
4 large kale leaves*
1 (12-ounce) package bowtie pasta
3/4 pound hot Italian sausage
1 medium onion, chopped
4 garlic cloves, minced
1/4 cup balsamic vinegar
1 (14 1/2-ounce) can chicken broth
4 fresh basil leaves, thinly sliced
1 tablespoon chopped fresh or 1 teaspoon dried oregano
1/4 teaspoon pepper
1/8 teaspoon salt
3 tablespoons pine nuts, toasted
6 ounces crumbled feta cheese
Arrange kale in a steamer basket over boiling water; cover and steam 2 minutes. Drain. Remove thick stems, and cut leaves into thin strips; set aside.
Cook pasta according to package directions; drain and set aside.
Remove and discard casings from sausage. Cook sausage in a Dutch oven over medium heat, stirring until it crumbles and is no longer pink; drain.
Add onion to sausage in Dutch oven, and sauté 5 minutes. Add garlic, and sauté 1 minute. Add vinegar, and cook 3 minutes. Add chicken broth and kale; cook 5 minutes. Stir in basil and next 3 ingredients; cook 1 minute. Stir in pine nuts, pasta, and feta cheese; cook until thoroughly heated. Serve immediately.
*1 (6-ounce) package fresh baby spinach may be substituted for kale. Omit steaming procedure.
Yield: Makes 6 servings

Speaking generally, heavier pastas should be served with heavier, chunkier sauces. My favorite sauce to serve with farfalle (bowtie) pasta is below:
FARFALLE WITH SAUSAGE, TOMATOES, AND CREAM
2 tablespoons olive oil
1 pound sweet Italian sausages, casings removed
1/2 teaspoon dried crushed red pepper
1 cup chopped onion
3 garlic cloves, minced
1 28-ounce can crushed tomatoes with added puree
1/2 cup whipping cream
1 pound farfalle (bow-tie pasta)
1/2 cup (packed) chopped fresh basil
Freshly grated Pecorino Romano cheese
Heat oil in heavy large skillet over medium-high heat. Add sausage and crushed red pepper. Sauté until sausage is no longer pink, breaking up with back of fork, about 5 minutes. Add onion and garlic; sauté until onion is tender and sausage is browned, about 3 minutes longer. Add tomatoes and cream. Reduce heat to low and simmer until sausage mixture thickens, about 3 minutes. Season to taste with salt and pepper.
Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain, reserving 1 cup cooking liquid. Return pasta to same pot. Add sausage mixture and toss over medium-low heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is dry. Transfer pasta to serving dish. Sprinkle with basil. Serve, passing cheese separately.
Makes 6 servings.

I have a good one which is bowties, broccoli, and an alfredo sauce thinned down with white wine. And more garlic of course. You can add sliced mushrooms while you're warming the garlic and broccoli.

Actually, alfredo sauce goes well with bowtie, and also white mussels sauce... Alfredo and some shrimp could be a winning combination on the ties.

hot pasta, mix with ricotta cheese, salt and pepper and some fresh herbs of your choosing. Add a ladleful of the pasta water to thicken the sauce and make it creamy. Add grilled shrimp or grilled chicken or other steamed, roasted or grilled veggies if you want. So easy. So sosososososososoo good.
