You can never know for sure if something is true. Nobody can. Truth is something created by people. If alot of people agree with each other about a certain concept they may develop something they call true.
Often you can ony "trust" that what someone else is saying is true. From the consequences you will learn whether it was also your "trurth". Also instinct well help in deciding this.

Philosophically speaking, there is nothing that can be absolutely true or false ... EVERYTHING is limited to interrpretation by our 5 senses. So just because our eyes can not see it, does it mean that something is not really there? Of course not! As physical beings, we do have limitations.
What society accepts as truth is that which is "commonly" accepted, and nothing more ...
If you are looking to form your own opinion on something, then simply do your research and trust your gut instincts until you are at peace with your findings.

The sky is blue, the earth is round, 2+2=4. Beyond that, nothing is certain. Explore, read philosophy and history. Listen to your heart. If it's true because you want it to be true, you need to question further.

From a scientific perspective, something is believed to be true until it is disproved. By using the scientific method, one poses a hypothesis and then sets up an experiment that tests that hypothesis. If the experiment disproves the hypothesis, then further questions and experiments can be studied and tested. If the experiment proves the hypothesis, then that hypothesis is held to be true until other experiments disprove it.

You feel it in your bones.
Seriously, you will sense it in more than one way. If something is really true, it will both make sense in your mind, and feel right in your heart. If you are talking about cold hard scientific data, then consult research for scientific proof - found in statistical significance. It's all about the numbers.

observe / watch, get a feel of what it is, before judgements made, go through a trial, trust your own instincts and try to counter argue over any doubts in your mind that it may not be true, finally, you'll be able to derive the conclusion on your own, based on your own observation, trial and experience.

You don't know absolutly for sure. All empirical evidence is veiwed as probability. So you can say that something is probably this way or that. Absolute knowlege is impossible.
