I am trying to find some nice chicken recipes but I am such a picky eater its hard to find many, I dont like chinese or thai food. Can anyone help me!

Use skinless boneless chicken breasts.......cut up and brown in a little olive oil....add chopped garlic and chopped tomatoes.....add seasonings of your choice......simmer for a few minutes....serve over whole wheat pasta or brown rice.

Take 6(change the amounts depending on how much chicken you have... this would work for one pound) cloves of garlic & mash them (you can use a food processor or a mortar & pestle)
add salt, oregano, & a little bit of olive oil..make into a paste

If you have all purpose seasoning sprinkle some all over the chicken then rub the paste all over the chicken breasts (you may want to cut some slits in the chicken to get seasoning inside)

Put in a pan with a little bit of butter to saute (you can also add half a cup of white wine & a tablesppon of lemon juice, this part is optional... I just love how juicey & tasty it comes out)



Serve on top of plain pasta or on the side of rice pilaf

Healthy Chicken Enchiladas:

5 small tomatillos, coarsely chopped
2 plum tomatoes, coarsely chopped
1/2 medium-size yellow onion, coarsely chopped
1 (10-ounce) can diced tomatoes and green chiles, drained
2 cups (8 ounces) shredded fat-free Cheddar cheese, divided
2 cups (8 ounces) shredded fat-free mozzarella cheese, divided
2 (8-ounce) packages fat-free cream cheese, softened
2 jalapeño peppers, seeded and chopped
1/2 cup chopped fresh cilantro
1/2 cup low-sodium chicken broth
2 cups chopped cooked chicken
10 (7-inch) flour tortillas

Process first 4 ingredients in a food processor or blender, stopping to scrape down sides.

Stir together half of Cheddar, half of mozzarella, cream cheese, and next 3 ingredients. Stir in chopped chicken. Spoon mixture evenly onto 1 side of each tortilla; roll up, and place, seam sides down, in a 11- x 7-inch baking dish. Sprinkle with remaining cheeses; top with tomato sauce.

Bake at 350° for 35 minutes. Serve with black beans and rice.

NOTE: If you don't have time to spare for the prep work, you can easily make this dish ahead. Cover and chill enchiladas up to 8 hours before baking, if desired. To serve, uncover and bake at 350° for 40 to 45 minutes or until thoroughly heated.

Yield: Makes 4 to 6 servings

try my style stir-fry with chicken u put what u want in it and u dont need to add soy etc and other sauces that goes with thai and chineese food. U will need 1 wok a spatula and some oil of some sort. and noodles plus Chicken, 3 veg i like carrot sweetcorn and brocoli. U can even use frozen veg but will have to thaw it out though or there will be a lot of water in the wok. Cut the chicken into squares put in hot wok with oil in and keep stirrin till all the chicken is white usually 2-4 mins. Then put in the veg and keep stirin for another 2 mins (still on high heat) then add soy sauce etc if required stir in for another min then finally add in noodles for a few mins and thats it. Grilled Lemon Chicken Kebabs

This is what we all need – something easy to prepare and really fast to cook that also tastes exceptionally good. Serve with rice or salad or both, or, instead of the rice, warm crusty bread to dip into the juices.


Serves 2

Ingredients
2 Traditional Free Range boneless chicken breasts, skin on


juice 1 lemon, plus 1 level teaspoon grated lemon zest


3 thick slices lemon, cut into quarters


2 fl oz (55 ml) olive oil


1 clove garlic, peeled and crushed


1 level dessertspoon chopped fresh oregano


1 teaspoon white wine vinegar


2 bay leaves, torn in half


salt and freshly milled black pepper


For the gremolata:

1 clove garlic, peeled and finely chopped


1 heaped teaspoon grated lemon zest


1 tablespoon chopped fresh parsley


You will also need 2 wooden skewers, 10 inches (25.5 cm) long, soaked in water for at least 30 minutes before you start cooking.


Begin by chopping each piece of chicken into 5 chunky pieces, leaving the skin on, and place them in a bowl, along with the lemon juice and zest, oil, garlic, oregano, white wine vinegar and plenty of seasoning. Cover and leave to marinate overnight or for a few hours – or for as much time as you have.

To cook the chicken, pre-heat the grill to its highest setting at least 10 minutes ahead, then first thread half a bay leaf on to the first skewer, followed by a quarter-slice of lemon, then a piece of chicken. Carry on alternating the lemon and chicken until you have used 5 pieces of chicken, finishing off with a lemon quarter and another bay leaf half at the end and making sure you pack everything together as tightly as possible. Repeat with the second skewer, then place them both on a grill rack, and underneath the rack place a heatproof dish to catch the juices. The kebabs should be 4 inches (10 cm) from the grill, and as they cook you need to baste them with the marinade juices. They will need 10 minutes on each side to cook through and become nice and dark and toasted at the edges.

While they're under the grill, mix the gremolata ingredients together and have it ready. When the chicken is done, transfer it to a serving plate and keep warm. Now put the rest of the marinade, plus the basting juices, in a saucepan and boil to reduce to a syrupy consistency, which will take about 2 minutes. Pour this over the chicken and sprinkle the gremolata all over as it goes to the table.

take a whole chicken,slice an organic lemon in half, squeeze half over the skin, then place both halves inside the chicken,add two whole garlic cloves just bruised not chopped, then roast as usual, when cooked, remove the skin and serve, either as roast chicken with veg, or let it go cold and use in salads or wraps etc. the lemon keeps the meat juicy and tender without imparting too much lemon flavor
