I filed my taxes, and just received an interest statement for $40. Do I have to file an amended return?

The additional income does not affect the amount owed or refunded. Is it really neccessary to report this amount?

not if it doesnt affect your tax liability

Yes. If it were under 25.00, it would be different. It may be wise to wait on doing your amendment until the middle of Feb, that way you will be sure to have all other "surprise" documents which might still come in.
