I've tried several different things for a marinade for salmon. The best way so far is just a light dusting of Lemon Pepper, and bake it. Then once it's out of the oven, just a touch of olive oil.
I personally don't like salmon, but my fiance does, and this is his favorite way to have me cook it.

I put fresh caught salmon in aluminum foil, sprinkled it with garlic powder, bread crumbs and added some lemon juice. I then wrapped up the salmon and baked it at 350 for about 15 mins. I then turned it over in the foil, added a little butter and baked an additional 5-10 mins. It came out better than the restaurant had made it! If desired, you can also add a little white wine to it prior to baking.

You can use whatever spices or herbs you want but use a small amount of olive oil to small amount of vinegar (champagne). Do not completely saturate or bury the salmon but rather just coat it on all sides and let stand refrigerated for 1-2 hours. Bring out to room temp.for 1 hour prior to cooking. My personal favorite is:
1 Tablespoon olive oil
2 teaspoons balsamic vinegar
Fresh grated ginger 1/8 teas
1 teaspoon brown sugar (light)
2 teaspoons fresh cut dill (green only)
*mix all together and marinade. Bon appetite

Beer Salmon:
1 (12-inch) tail piece salmon fillet (about 1 1/2 pounds)
2 teaspoons garlic salt
3 tablespoons brown sugar
4 tablespoons butter, cut into small pieces
1 small red onion, thinly sliced
1 (12-ounce) bottle beer
Preheat grill to medium-high heat.
Using aluminum foil, create an oblong cooking tray (approximately 13 inches by 8 inches by 2 inches) to be placed directly on grill. Place salmon fillet in center of tray. Season first with garlic salt, sprinkle with brown sugar, and then cover with pieces of butter. Top with sliced red onions. Pour beer of choice into tray to just below the highest point of the fillet. Cover tray with aluminum foil to envelope fish completely. Place tray on grill, cover with lid, and grill for approximately 8 minutes or until just cooked through.
When i first heard this recipe I thought "no way!" However, after trying it, my family and friends just love it! Absolutely melts in your mouth delicious.

We always just broil it, covered with thin slices of lemon to protect the fish and flavor it. To serve, remove the burned lemon slices and garnish with fresh lemon wedges.
