I push produce for a living for now, and the other day I was displaying some beautiful bulbs of garlic. Every food fanatic knows that garlic is a staple in cooking, but vampires must have it really rough, not being able to use aromatics like this in their cooking. I was wondering what the actual chemical compound in garlic repels vampire?

A large number of sulfur compounds contribute to the smell and taste of garlic. Diallyl disulfide is believed to be an important odor component. Allicin has been found to be the compound most responsible for the spiciness of raw garlic. This chemical opens thermoTRP (transient receptor potential) channels that are responsible for the burning sense of heat in foods. The process of cooking garlic removes allicin, thus mellowing its spiciness

It may have some cancer-fighting properties because it is high in diallyl sulphide (DADs), believed to be an anticarcinogen.[20]Decocted garlic extracts that are left to set overnight are very effective in healing wounds. In 1858, Louis Pasteur observed garlic's antibacterial activity, and it was used as an antiseptic to prevent gangrene during World War I and World War II.[21]

Since vampires aren't real, there is no scientific basis for garlic repelling them. It's a bit like kryptonite and Superman.
