You want to be able to continually overwrite highlighted text?

In Word:
cl Tools
cl Options
cl Edit
cl "Typing Replaces Selection"

If it is to undo something you have just done typing wise, click on the curly arrow facing left icon at the top of your screen if its there! Or it could be that you have pressed the "insert" button on your keyboard it can insert characters/letters etc as per normal but if you depress it (ie take Ins off), anything you type wipes out automatically although can be fatal depeding on what you want to keep text wise.

Undo--as many times as it takes, depending on what changes you made in the meantime.

press ctrl + Z or edit>undo.
