I always just boil the corned beef in a big pot per package directions. When it's almost done, we microwave the vegetables, using fresh cabbage and red potatoes.
MICROWAVED BUTTERED CABBAGE WEDGES
1/2 med. cabbage, cut into 4-6 wedges
1/2 tsp. caraway seed
2 tbsp. butter
Arrange cabbage wedges in glass baking dish. Add 2 tablespoons water. Sprinkle with caraway seed; cover. Microwave on high for 7 minutes; rotate dish. Microwave on high for 5 minutes longer. Place butter in small glass bowl. Microwave on high for 30 seconds. Drizzle over cabbage.
EASY MICROWAVE POTATOES
5-6 sm. red potatoes
Salt & pepper to taste
2-3 tbsp. butter
Parsley flakes
Melt butter in shallow microwave container. Cut potatoes in half, coat with melted butter. Sprinkle with salt, pepper and parsley flakes. Cover with saran wrap vented in 1 corner. Microwave at 3/4 power 8-10 minutes until tender.
Here's a really easy soda bread recipe, doesn't even call for yeast:
IRISH SODA BREAD
4 to 4 1/2 c. all-purpose flour, unsifted
1 tsp. salt
3 tsp. baking powder
1 tsp. soda
1/4 c. sugar (optional)
1/8 tsp. ground cardamom or coriander (optional)
1/4 c. butter
1 egg
1 3/4 c. buttermilk
In a large bowl stir together 4 cups of the flour, salt, baking powder, soda, and sugar and cardamom (if used) until thoroughly blended. Cut in butter with a pastry blender or two knives until crumbly. In a separate bowl, beat egg slightly and mix with buttermilk; stir into dry ingredients until blended. Turn out on a floured board and knead until smooth (2 to 3 minutes).
Divide dough in half and shape each half into a smooth, round loaf; place each loaf in a greased 8-inch cake or pie pan. Press down until dough fills pans. With a razor blade or sharp, floured knife, cut crosses in tops of loaves, about 1/2 inch deep.
Bake in a 375 degree oven for 35 to 40 minutes or until nicely browned. Makes 2 loaves.
This might work for your dessert, kind of like a chocolate mousse with whiskey added:
IRISH COFFEE DESSERT
1 envelope unflavored gelatin
1/4 c. cold water
1 tbsp. instant coffee
1 1/2 tsp. unsweetened cocoa powder
1 1/3 c. milk
1/3 c. light brown sugar
2 tbsp. Irish whiskey
1/2 c. whipping or heavy cream
In small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Stir over low heat until gelatin is completely dissolved, about 3 minutes. Stir in instant coffee and cocoa until dissolved. In blender, process milk, sugar and whiskey. While blending, gradually add gelatin mixture through feed cap and cream until blended and frothy, about 1 minute. Pour into dessert dishes and chill until set, about 2 hours. Garnish, if desired, with additional whipped cream and cocoa powder.
