I marinate cucumbers in vinegar, oil, sugar and a bit of salt & pepper. How long can I safely keep these in the refrigerator? I make them with English cucumbers and always wind up with more than I can eat in a day or two.

Yum, I do the same thing but they do not keep well for too long. If you are getting a day or two out of it then you are doing pretty good. They get very soggy very quick. You can keep slice cukes for a couple of days, without the dressing but my advice would be to just make what you need at that time. A whole cuke will keep longer than the cut up pieces in the dressing. Good Luck

Try cutting your recipe down by half or even thirds if you cannot eat them all within 24 hours. This type salad is better eaten the same day or within a 24 hour period, after which they tend to start becoming soft, and are less enjoyable.

They are really only good till about 1 more day because the acidity causes them to get mushy.
Only one day after I made them would I eat them again.

I make something very similar and I try to eat it within 3 days because it does turn softer.

best when eaten right away. Refrigeration makes them too soft.

it will keep fresh for about a month with lemon juice and clos with a lid
