who hates heavy, sweet frosting? She likes cheesecake, Red Velvet cake (but that has a cream cheese frosting) - Any ideas? Thanks in advance! (no pies, please)

here's the perfect chocolate cake with a good, not to heavy glaze:

Chocolate! Chocolate! Chocolate! Bundt Cake with Chocolate Glaze
1¼ hours 15 min prep 16 servings 1 Cake

Cake
1 (18 1/4 ounce) package devil's food cake mix
1 (4 ounce) package instant chocolate pudding mix
2 cups semi-sweet chocolate chips
1 3/4 cups water
2 eggs, beaten
1 teaspoon vanilla extract
Chocolate Glaze
3 tablespoons cocoa
2 tablespoons butter, melted
1 (1 cup) cup 10X powdered sugar
2-3 tablespoons hot water

Cake: Preheat oven to 350°.
Grease and flour bundt pan, set aside.
In large mixing bowl, combine cake mix, pudding mix and chocolate chips.
In another bowl, combine water, eggs, and vanilla mixing well.
Add egg mixture to dry mixture and mix with spoon until just blended.
Pour into prepared pan.
Bake for 50 to 55 minutes or until cake tests done when wooden pick in center comes out clean.
Cool 15 to 20 minutes before removing cake from pan.
When completely cool, drizzle cake with Chocolate Glaze.
Chocolate Glaze: Combine all ingredients in bowl.
Mix with spoon until smooth.

This is one of my favorite cakes. I sometimes make this and give to friends for Christmas.

Milky Way Cake

CAKE
confectioners' sugar, for dusting pans
8 (1 3/4 ounce) Milky Way bars
1 1/2 cups butter
2 cups granulated sugar
4 eggs, well beaten
2 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1 1/4 cups buttermilk
1 cup chopped pecans (optional)
1 teaspoon vanilla extract

ICING
2 1/2 cups granulated sugar
1 cup evaporated milk
1 cup marshmallow cream
1/2 cup butter
6 ounces chocolate chips
1 cup chopped pecans

Preheat the oven to 325.

Grease three 9-in. cake pans and dust them with confectioner's sugar. To make the cake, melt the Milky Way bars with 1 stick of butter. Remove from heat and let cool.
Cream the remaining 2 sticks of butter with the granulated sugar. Add the beaten eggs and the cooled chocolate mixture.
Sift the flour and the baking soda together. Alternately add the flour and buttermilk to the batter, blending well. Add the nuts and vanilla.

Divide the batter among the prepared pans and bake for 30-40 minute or until the cake is firm to the touch. Cool for 5 minutes, remove from the pans and place on cooling racks.
While the cake cools prepare the icing. Combine the sugar and milk in a heavy saucepan. Cook to the soft-ball stage (234 degrees on a candy thermometer). Remove the pan from the heat and add the marshmallow cream, butter and chocolate chips, stirring until melted. Add the pecans. When the cake has cooled completely, frost each layer, sides and top of the Milky Way Cake.

This is not cake but if he hates heavy, sweet frosting the same as I do! ... this will be satisfying but not sickeningly sweet. Delish with a cup of hot tea snuggling under blanket on sofa watching a movie St. Valentine's day :)

Shortbread Hearts

Melt-in-your-mouth shortbread dipped in chocolate coating -- Mmm!

•2 cups flour
•1/2 cup sugar
•Dash salt
•1 cup cold butter
•1 tablespoon cold water
•1 teaspoon almond extract
•1/2 pound dark chocolate candy coating, melted
In a large bowl, combine flour, sugar and salt; cut in butter until mixture resembles coarse crumbs. Stir in water and almond extract until mixture forms a ball.
On a lightly floured surface, roll out dough to 1/4-inch thickness. Cut with a 2 1/2-inch heart-shaped cookie cutter dipped in flour. Place 1-inch apart on ungreased baking sheets. Cover and refrigerate 30 minutes.
Preheat oven to 325 degrees.
Bake for 13 to 16 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks to cool completely.
Dip one side of cookies in candy coating; place on waxed paper until set.
Makes about 2 dozen.

1 1/3 cup sour cream, divided
1/3 cup firmly packed dark brown sugar
1 tablespoon all-purpose flour
1/4 cup chopped pecans
5 ounces cream cheese, softened
1/4 teaspoon almond extract
***Chocolate Glaze:***
6 ounces semi-sweet chocolate
1/4 cup butter
3/4 cup powdered sugar
2 tablespoons water
1 teaspoon vanilla extract

Directions:

Grease and flour inside of Bread N� Cake Bake Pan. Combine cookie crumbs, 1/4 cup sugar, and butter in a small bowl. Press into bottom of Bread N� Cake Bake Pan. Set aside.

Combine 1 8-ounce package cream cheese and 1/4 cup sugar in a mixing bowl and beat well with an electric mixer. Add 1 egg and 1/4 teaspoon vanilla; beat well. Stir in melted chocolate and 1/2 cup sour cream. Spoon over the chocolate crust.

Combine in a small bowl the remaining 8-ounce package of cream cheese, brown sugar, and flour; beat well. Add 1 egg and 1/2 teaspoon vanilla; beat well. Fold in the pecans. Spoon this mixture over the chocolate layer. Do not stir.

In a small mixing bowl, combine the 5 ounces of cream cheese and 1/4 cup sugar; beat well. Add 1 egg; beat well. Stir in 1 cup of sour cream, 1/4 teaspoon vanilla, and almond extract. Spoon over the pecan layer. Do not stir. Cover Bread N� Cake Bake Pan with lid.

Place pan in Crock-Pot. Cover Crock-Pot and bake on High for 4 hours or until set. Remove Bread N� Cake Bake Pan from Crock-Pot. Remove the lid from pan. Allow cheesecake to cool completely. Refrigerate at least 8 hours. To serve, unmold cheesecake from Bread N� Cake Bake Pan onto plate and then invert onto another plate. Prepare glaze as directed and spread over cheesecake. Cut into slices and serve.

This recipe for 3 Layer Cheesecake serves/makes 8

WANT TO HAVE FUN AT A PARTY? PREPARE THIS RECIPE! COMPLETELY EDIBLE, BUT YOUR FRIENDS MAY NOT THINK SO!

On a recent visit to our veterinarian to get shots for our cat I found this recipe on the waiting room bulletin board. After recovering from hysterical laughter, I obtained a copy from the office staff so that my wife could make it, which she refused to do. I took it to work and gave the recipe to a lady at work who loves cats. The pictures below show the results of her work. It doesn't look very nice, but it's actually quite tasty, so I decided to pass it along.
CAKE INGREDIENTS: 1 box spice or German chocolate cake mix 1 box of white cake mix 1 package white sandwich cooki es 1 large package vanilla instant pudding mix A few drops green food coloring 12 small Tootsie Rolls or equivalent
SERVING "DISHES AND UTENSILS" 1 NEW cat-litter box 1 NEW cat-litter box liner 1 NEW pooper scooper
1) Prepare and bake cake mixes, according to directions, in any size pan. Prepare pudding and chill. Crumble cookies in small batches in blender or food processor. Add a few drops of green food coloring to 1 cup of cookie crumbs. Mix with a fork or shake in a jar. Set aside.
2) When cakes are at room temperature, crumble them into a large bowl. Toss with half of the remaining cookie crumbs and enough pudding to make the mixture moist but not soggy. Place liner in litter box and pour in mixture.
3) Unwrap 3 Tootsie Rolls and heat in a microwave until soft and pliable. Shape the blunt ends into slightly curved point s. Repeat with three more rolls. Bury the rolls decoratively in the cake mixture. Sprinkle remaining white cookie crumbs over the mixture, then scatter green crumbs lightly over top.
4) Heat 5 more Tootsie Rolls until almost melted. Scrape them on top of the cake and sprinkle with crumbs from the litter box. Heat the remaining Tootsie Roll until pliable and hang it over the edge of the box. Place box on a sheet of newspaper and serve with scooper. Enjoy! "Kitty Litter Cake"
