If you have an Olive Garden near you, try their eggplant parmesan....yumm You can also make an oven toasted veggie sandwich using french bread with roasted red peppers, fresh tomatoes, green peppers and black olives and cucumber slices topped with your favorite cheese in toaster oven for a few minutes, pour a smidgen of ranch dressing over it and enjoy. Or use some flatbread, pizza sauce and veggie ingredients like sundried tomatos, portobello mushrooms, black olives, and asiago cheese, make yourself a gourmet pizza.

Blimey, your a difficult one! I know exactely how you feel! My lunch is at 12 and I cant decide what to have. I might pop down to Subway and get a roast chicken and cheese melt. But I know you dont eat meat so you cant have the same. How about some noodles with pancake rolls? A Chinese/Thai in otherwords, minus the meat and rice?? Tasty!!

a vegetarian pizza might be good. Also, an Asian noodle stir fry with tofu would be good. burritos filled with beans/rice/sour cream etc would be meatless and filling. Maybe tomato soup with a grilled cheese sandwich!
