In a word BACTERIA.

Meat is a very good environment for bacteria to grow.

Fruit which in general is much more acid and has many more natural defenses may grow molds but rarely are good media for the growth of bacteria.

Another way to look at it is that plants have their defenses organized at the cellular level. Even when you harvest the fruit, the cells don't "die" right away. Animals organize their defenses and cellular support systems at the organism level and depend on an active circulatory system to protect itself ... when you kill an animal, that immediately comes to an abrupt end. Antibodies no longer circulate, wastes no longer get transported to organs, and food and oxygen are no longer distributed.

Furthermore ... vegetables and fruits are generally kept intact, but meat is cut into pieces or in the case of hamburger ... ground destroying cells, cell walls and the like in the process.

Sorry but in this regard meat is no different to fruit and vegetables.All foodstuffs will deteriorate over time and the length of time it takes is dependent on whether the item has artificial preservatives to extend its shelf life and temperature whilst in store.That is why many foodstuffs are kept frozen or chilled-to retard the growth rate of bacteria which is present in all foodstuffs and which then feeds off the item making it degenerate and ultimately rot.
If you're talking about why meat, when it goes off, has a stink unlike that of any other food then you're into the world of ecological balance.Rotting meat attracts certain types of flies (rotting fruit and vegetable matter would be appealing to other types),on which they will lay their eggs.The flies thus breed and in turn are food for birds,reptiles and other insects.
God works in mysterious ways and not always in ways that smell the best!!

vegetables go off too.... it goes bad because it is a dead animal..... bacteria and other nasty stuff gets to it and rots it
