Devil's Steak Sauce
INGREDIENTS
2 tablespoons raspberry jam
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons tomato sauce
2 tablespoons malt vinegar
5 drops hot pepper sauce
salt and freshly ground black pepper to taste
DIRECTIONS
In a saucepan over high heat, blend raspberry jam, brown sugar, Worcestershire sauce, tomato sauce, malt vinegar, hot pepper sauce, salt, and pepper. Bring to a boil over high heat, reduce heat to low, and simmer 10 minutes, or until thickened

Pan-fried Steak with Marsala Sauce
INGREDIENTS
2 pounds beef chuck steaks, well trimmed
salt and pepper to taste
2 cloves garlic, crushed
1/2 cup Marsala wine
1/2 cup chicken broth
3 tablespoons butter
1/4 teaspoon dried rosemary, crushed
DIRECTIONS
Heat a large, heavy skillet over high heat for 2 minutes, or until very hot. Season steaks with salt and pepper to taste.
Place steaks in hot skillet and immediately turn down the heat to medium high. Cook for 4 minutes. Turn steaks and cook for an additional 4 to 6 minutes, depending on your tastes. Remove steaks from skillet to a platter and cover with aluminum foil to keep warm.
Remove skillet from heat. Quickly saute the garlic for 1 to 2 minutes in the skillet using residual heat. Return skillet to medium low heat and add Marsala and chicken broth. Bring to a boil and reduce for 3 minutes.
Remove pan from heat and whisk in butter and rosemary. Serve sauce over steaks.

As far as the pepper goes your best bet would be to give your steak a mild black pepper rub before grilling it.
A good choice of sauce that usually is served with a filet is Bernaisse sauce which is hollandaisse with the addition of tarragon.

Steak with Blue cheese butter
1/2 cup butter or margarine, softened
1/2 cup crumbled blue cheese
1 tablespoon chopped parsley
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
1 clove garlic, minced
2 beef t-bone steaks or porterhouse steaks
In a small bowl combine butter, blue cheese, parsley, basil and garlic.
Set aside.
Grill steaks to desired doneness.
Top each steak with a generous amount of the butter mixture.
Chill the remaining butter for another time.
(Try the butter mixture tossed with hot cooked vegetables).

I really like a strong cheese sauce with steak, something like Stilton or Gorgonzola. In a pan fry a chopped clove of garlic and some mushrooms in olive oil, then add cream and a splash of white wine, reduce and then add crumbled cheese, heat through until cheese is just beginning to melt.

For a more subtle flavour to your pepper sauce try looking around for Soft Green Peppercorns, they come in tins marinated in brine.
As soon as the steak is cooked to your liking, keep it warm and to one side to rest,
chuck in the pan a few finely chopped onions or shallots and a tiny bit of crushed garlic,
add a handful of the peppercorns which should be drained and crushed, saute for a minute in the hot pan,
add a slosh of brandy, carefully flambe (set on fire!) if you want, to burn off the alcohol,
next a ladle of pre prepared good gravy and a dash of double or whipping cream,
bring back to just boiling, taste for seasoning add add some salt if required. Voila!

Roasted Chili Sauce
4 jalapeno peppers Split peppers remove seeds,
roast over grill or open flame
until skin browns and begins
to bubble. Remove skin. Cut
into fine dice.
1 medium onion Fine dice onion. Brown lightly
in vegetable oil. add diced
chilies, stir and keep on low heat.
In medium bowl combine:
Chilies and onions
1Tbl Spoon Brown Mustard(the kind with the little round seeds.
Juice of half a lime
Pinch of fresh cilantro chopped
1/4 tsp of red chili powder
Salt and Pepper to taste
Spread over top of favorite steak. Serve hot. Enjoy!

I take some softened butter and add a sprinkle of garlic salt (or a crushed garlic clove) and then a chunk of crumbled Stilton cheese, mix it up a bit and then spread generously on top of your almost cooked steak and grill til it's bubbly.

Grind black pepper into a frying pan, crumble in a beef stock cube, add a glug of Brandy, and pour in the cream. Takes less than 2 minutes as you're not cooking it as such, more just heating it up!
