Do I heat it up in a pan? How? And what is a good - but not insanely expensive - brand of Sake I can buy in Europe?

The traditional way to serve sake is in a wooden box like cup which is square ... about 2" per side and 2" tall. It has thick straight side walls with a brim about 3/16" to 1/4" thick. You then put salt on the top of the box walls and fill the box to overflowing ... to show abundance.

You heat or chill sake gently in the bottle wither with refrigeration (or an ice/water bath) or with hot but not boiling water in a pan.

Look for Napasaki in a really cool blue bottle shaped like a fish. It is made in the traditional high standard way and did I mention it also comes in a really cool bottle shaped like a fish. It is reasonably priced at about $10-12 for a 375ml bottle.

Sake may be served either warm or chilled. As regards, how to chill it, the answer is quite obvious.......refrigerate and serve. To serve warm sake, you can immerse the bottle of sake in warm water for a few minutes before you are ready to serve

just don`t heat it in pan .... it`s dangerous way ....
