If I'm only taking online courses then am I able to deduct sum/all of those bills on my taxes?

I believe educational expenses are usually not deductible unless they are a part of your current business expenses. Check with your tax preparer or call the IRS.

For example, the cost of education to become a dentist is not tax deductible. However, the cost of continuing education for a practicing dentist is tax deductible.

No, education credits don't include items like that. You could probably take a credit for a portion of your tuition and fees, though.
