According to my understanding, our mental/reasoning and logic abilities give us the freedom to rise above instinct, unlike the animals. All of these things you mentioned play a part in the scheme of who we are, even to the point of having the ability to understand the concepts of science, mathematics, music, and the ability to believe in a Creator or God. The animals have all of these things minus the reasoning and logic ability. It is amazing that the animals instinctively obey God, yet men who are given a choice refuse to.

In the mind, thought process. Genetics is in control but genetic engineering could change that, and in a way plastic surgery. Chemical makeup can be changed with medicine/drugs. Social and environment are not in control as you can change those by turning your back on people and society or moving to a new location with different customs, maybe even becoming a hermit.
