Actually, as pure water is boiled out of the pot, a higher concentration of minerals, which do not boil out, is left.

It is also possible that some of the taste of the pan itself is imparted to the boiling water.

Because all the minerals are boiled out and that makes it have a taste. It might also be certain peoples taste buds because I think that water TASTES nasty.

the minerals and bacteria in the water give it that great flavor and when you boil it some of those things get killed.
