You could fry the chicken in garlic and olive oil until it is golden brown. While the chicken is getting cooked thoroughly saute the mushrooms in butter, parsley, and a Little wine. If you have no wine you can use soy sauce or teriyaki. Then top the chicken with the mushrooms, and chow down.

You will need 1 Tbl Spoon Butter,1/4 Cup cream, 1 egg,1/2 Cup flour, boneless/skinless chicken breast and 1 Cup sliced mushrooms, 1 clove chopped garlic.
Wrap chicken breast in piece of cellophane, just set it on one side of a square and fold other side over so chicken is covered.
Flatten chicken breast with mallet or you can use bottom of coffee mug. You want chicken to be about 1/4 of an inch thick.
Dredge chicken breast in beaten egg, then flour. Season flour with salt and pepper if you prefer.
In medium pan melt the butter and let it start to bubble.Do not burn it.
Reduce heat slightly. Saute Mushrooms and garlic, add chicken and cook until lightly browned on both sides. be careful not to
burn mush rooms and garlic. Add the cream or you may want to add1/4 cup red cooking wine.

I hope you have red wine, or white will do, make chicken marsala- which is boneless chicken pounded then lightly breaded, sauteed with sliced mushrooms in marsala wine- or like I said any wine will suffice but red is better. Add butter to a frying pan, start sauteeing the chicken breasts until lightly brown on each side, add the mushrooms which will start to make a liquid in the frying pan, add the marsala wine--- serve over rice, couscous or pasta, or eat it plain with a salad---

Cut the chicken breasts into 1" strips. Then alternate the chicken breast strips and mushrooms on skewers. Brush with olive oil, season with light salt and pepper and grill over direct-medium fire until done (about 10-12 minutes), turning every two minutes or so.

Mediterranean Chicken Recipe:
Ingredients:
Penne pasta
2 diced chicken fillets
1 tbsp Olive Oil
Spice of your choice (ie. chilli, all purpose spice, paprika)
2 tins of chopped tomatoes
Some tomato paste, or sun dried tomato pesto
Sliced button mushrooms
Kalamata olives
Method:
•Get a pot of penne pasta on the go in the usual way.
•In a large frying pan or wok, heat olive oil, and brown the diced chicken fillets which have been tossed in the spice of your choice.
•Add the tins of chopped tomatoes, some tomato paste or sun dried tomato pesto, plenty of sliced button mushrooms, and as many kalamata olives as you like.
•Cook on a medium heat till mushrooms are soft and everything is heated through.
•You can either throw the pasta into the mix, or serve up separately.

season chicken with salt and pepper. dredge in flour.let set while you heat a litttle oil in skillet.brown on each side. slice mushrooms. pour enough white wine in skillet to almost cover chicken. add mushrooms. cook until chicken is no longer pink.
remove chicken. you can use alittle cornstarch and water to make gravy. serve over rice or hot buttered noodles

pound the chicken flat then sautee the mushroons with onions and celery.when they are slightly brown add some red wine cook for another 2 minutes then put in bowl add some bread crumbs till it is the consistancey of stuffing put som on the flatten chicken and roll tie it together with butchers sting and sear in a very hot pan on all sides of the roll.
then place it in a baking pan or leave it in the pan if it is oven safe then bake at 375 for 20 minuts or till the internal temp reaches 155
take out degaze pan with a little whisky and add some dejon mustard. cook the sauce to a sauce consistancy then pour over chicken.
damn that sounds goo i think it is time for a midnight snack.

sautee those mushrooms in butter or wine. Make a sauce of melted white cheese and add them. Bake the chicken in a marrinate of lemon juice and butter. Add the sauce over the top. Serves well with cranberries.

cut chicken into small cubes, cook them with a bit of oil.
cut tomatos and onion on large stripps and cook them on a pan (first the onion) and then the tomatos along with the mushrooms, add the chicken to it, and add some soy souce into it...
salt, peper and maybe other spices at your will and taste...
If you have some potatos make some fries first put that on the first layer and then pour in the chicken (with the tomato, onion, etc).
Also if you have some "chile" or pepper include it on the basic recipie.
This is a Peruvian plate called "Pollo Saltado" it is just great, easy and taste like heaven...

You can make chicken picatta.
Slice chicken to 1/4 inch thick pieces
dredge chicken in salt, pepper & flour
brown chicken in olive oil & butter
remove chicken from pan
brown mushroom in pan add additional butter & oil if necessary
deglaze pan with chicken broth
add chicken back in pan and season with lemon juice, capers & crushed chili flakes.
Boil pasta and mix with chicken & sauce.
