The cupcakes will stay fresher if you ice them as soon as possible after baking. Bake, cool, ice them. The reason cupcakes dry out so fast is there is more surface area exposed to the air so the sooner you frost them the better. So make tonight and frost tonight then cover as best as possible and refrigerate or leave at room temp. Or Make and frost tomorrow.

Place a plastic wrap over them and place them in the fridge. That way, ants won't come crawling all over them.
