Aloo Bhaji

Ingredients

- 750 g. potatoes
- 1 small onion. peeled thinly sliced
- 2 tbsp. oil
- 3\4 cup water
- 1\2 tsp. turmeric powder
- 1 tsp. salt
- 1 tsp. chili powder
- 1\2 tsp. nigella seeds (kalonji)
- 1 level tsp. fenugreek (methi dana)
- 1 level tsp. mustard seeds (rai)
- 2 small bay leaves
- 1 level tsp. garam masala
- 1\2 cup fresh coriander leaves. finely chopped.

1. Peel and cut the potatoes into thick slices or small cubes.
2. Heat oil in a medium skillet, add onions, sauté until transparent.
3. Add potatoes, tomatoes, chili powder, turmeric, coriander powder and salt. Stirring occasionally cook until the tomatoes are reduced to pulp, and oil begin to separate.
4. Add water and bring to a boil, reduce heat to low, cover and cook for 12-15 minutes or until the potatoes are tender. Add more water if you need gravy.
5. Sprinkle with garam masala, coriander leaves and green chilies, cover and leave to infuse for 2-3 minutes before serving.
6. Serve with Poori.
Try our Achar Aloo which are also excellent with poori.

Take quarter kilo Aloo.
Wash it & cook it in pressure cooker with 2 glass water.
meanwhile you take 3 onion,3 green chilly,1 inch piece ginger[all small sliced].
When the cooker pressure gone,you take the alloo's out & peel it &smash it [not so paste].
Keep kadai on the stove & slitter mustard &one sliced red chilly.
If it slitter put all the onion set in & fry till onion became transperant you can add half teaspoon turmeric pdr & half teaspoon chilly pdr & put the smashed aloo's & salt to taste.
You can put how much water you need. But for Puri's side dish thick baji will be suitable.
Last off the stove & put some curry leaves & sliced kothameer
Your nice aloo baji is ready. Eat hot hot.[garam garam khavo]

well,first you boil the aloos and smash it.take a pan,put two spoons of oil,put cutted onions,put some green chillies,then you put some turmeric powder,put smashed potatoes,put some water,put salt,then leave some time.then take pan from the stove.and serve hot.

Hi!!
Take boil patetoes, oil, rai-jira, urad dal, neem patta, lemon, salt, haldi, ginger-green chillies patse and salt for teste. coriendre for garnish.

First in 1 pan take oil let them to heat for 2-3 minutes, then put rai, jira, urad dal,hing, neem patta let them cook till dal become slightly brown. After that put ginger green chillies paste for making dish spicy. Put boil patetoes pieaces and let them cook for 2 minutes after all this process add salt according to taste, 1/2 tsp of lemon juice and haldi mix it perfectly. And garnise with coriender.
If you like white teal so you can put with urad dal in tadka.
