I knew someone who tried to make strawberry wine, and forgot to add the yeast- yet it fermented due to the natural yeasts on the fruit.

She had the yeast growing in a jar on top of her fridge. She liked it better because it made her wine turn out really good.

if you dont sterilize you could end up with alot of vingar or off flavors and aromas from wild yeast

because if you didn't clean it out, or off the bacteria could grow into something deadly, or maybe even a kind of bromide something or ether...
