What causes nervous habits is a complex question and is different for everyone. In most cases, it simply in the nature of a person. Some people need to be constantly moving, like people who "wiggle" there leg while sitting. For others, its just keeping "busy". It can also be because of nervousness. For others, its there personality. It could also simply be a bad habit that you picked up during a more stressful period of you life.

As to how to stop them, it depends on what causes your habits. The fact you hyperventilate would point to a more emotional cause. That means nervousness, stress or other emotions. You will need to learn to control them or express your emotions in another way in this case.

If it’s a bad habit picked up in the past, most people have to do something else with there hands of distract themselves otherwise. Sometimes, it may just disappear on its own with time.

If it is because you are the type that doesn’t stop moving (does not necessarily mean active), you could take the stairs instead of the elevator, take walks throughout the day, i.e. find other ways to spend your energy. If this is the case, going to the gym won't help since its will only spend energy during that period of time.

All in all, it is finding the right combination that works for you. Hope this helps.
