Salads are great for lunch. If you actually want to break out the roasting pan and skillet then you may need to do that for dinner.
But there are some great pre-seasoned, pre-cooked chicken slices. They are seasoned with italian seasonings and othe things. You can pop them in the microwave for a couple of minutes add them to a hearty Romaine or spinach salad with soem cheese, maybe a boiled egg, cucumber (whatever you like). They're also great for putting in torillas. You can buy small or large tortillas and place them inside with shredded cheese and bacon or bacon bits put them in the oven for 10 minutes--Quesadilla!!!
Pasta makes a great dish and it's easy. Pour some pasta (linguini, shells, bowties, macaroni) in a pot with some water and a dash of salt boil it until the pasta doubles in size and is tender. Take it out the pot strain it and put a little butter on it.
Frozen shrimp are really easy to cook. Out the bag, in the skillet until they are clear and pink and put them on anything.
My personal fav-Grilled Cheese!!!! A comfort food.

This is a favorite of mine. And it's so easy to do:
Beef Salpicao
Cubed beef tenderloin
Olive Oil (around 1/4 cup)
1 entire head of garlic
3 tbsps liquid seasoning (I prefer Knorr)
2 tbsps Worcesteshire sauce
Pepper
Marinate the beef in the liquid seasoning and half of the garlic. Set aside.
Fry the rest of the garlic in the olive oil (preferably in a non-stick pan). When the garlic has been toasted, take out the garlic and set aside. Reserve the oil.
Using the same olive oil you fried the garlic in, cook the tenderloin cubes. If you like your beef rare, this should only take a minute. I like my beef medium so it takes 3-4. Add pepper to taste.
Take the beef out and add the garlic you toasted on top. Enjoy.
(just adjust the amount of liquid seasoning you want)
