Just kidding. Well about sending her over.

She does make great sweet potatoe fries. She bakes them in the oven on a plain cookie sheet. A bit healthier than frying in oil. She will sometimes brush them with olive oil. I think the trick is she slices them pretty thin and when she thinks they are done, she leaves them in the oven for another few minutes. Just don't let them get toooooo brown.

We haven't tried frying them in hot oil, I am sure that would be good. Most anything fried in oil is good!

I am sure the secret to crispy sweet potato fries is the same as for regular fries.....blanch your potatoes in the hot oil as in flash fry them for just a minute to get them soft. Then let them drain and cool a bit before reimmersing them in your hot oil to fry and complete cooking. Make sure your oil is already hot to 350 degrees when you start and make sure you use a fresh canola or peanut oil.....

Wash your sweet potatoes then slice daigonally 1/4 inch thick. fry in hot 400 degrees peanut oil, drain on paper towels and sprinkle with white sugar.

the same as you do regular fries, just cut them batter them and fry them
