Make a lazy lasagna. Instead of long lasagna noodles, layer egg noodles or rigatoni, etc. in between traditional fillings (meat, mushrooms, sauce, cheeses).

Giada has a great classic recipe on foodnetwork.com. It is easy and quite authentic. It involves making a bechamel sauce and adding a can of tomato sauce to that. I actually use the Hunts sauce for Lasagna with good results. I also skip the spinach layer and use ready made noodles. I like the Barilla brand. If you are interested in the recipe and can't find it on the site email and I will gladly help you.....you would be glad you just didn't add some meat to some jarred sauce and do it that way. This is very good and I make it often when I don't have time to make lasagna.

I have a quick lasagna that i make sometimes. Gets all the same flavors without all the work. First boil water for some rotini noodles. Brown up some hamburger and add 1 small can of tomato paste, about a tablespoon of italian seasoning and a can or two of water. Mix together 1 22oz container of cottage cheese, 1/2 an 8 oz bag of mozzerella, a few glugs of olive oil, and a good handful of grated parmesan cheese, garlic salt, salt and pepper, and some either fresh or dried parsley. Now you are ready to assemble. Drain noodles and pour into a 9x 13 baking pan. Pour a few glugs of olive oil in (a few tablespoons) and stir up. Next pour on the meat mixture. Next pour on the cottage cheese mixture, and top with the rest of the mozzerella. Cover with aluminum foil and bake for 30-45 minutes..
Saves time because you aren't fiddling with layers and all that mess.

8 lasagna noodles
1 pound ground beef
1 jar spaghetti sauce
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 pound cottage cheese
8 ounces sour cream
12 slices mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup water

1. Preheat oven to 350 degrees F.
2. Brown and crumble beef in large skillet over medium-high heat; drain fat.
3. Add spaghetti sauce, garlic powder, oregano and basil to meat and blend thoroughly; heat through and set aside.
4. Combine cottage cheese and sour cream in a bowl and blend well.
5. Place 1 cup of meat sauce in bottom of a 13x9-inch baking dish and spread out evenly.
6. Place 4 uncooked noodles in a row over sauce, then half the sour cream and cottage cheese mixture (spread over noodles), 4 slices of mozzarella cheese, another half of the meat sauce and 1/4 cup of the Parmesan cheese.
7. Repeat layers with the remaining ingredients and top with 4 more pieces of the mozzarella cheese.
8. Pour the water around the sides of the baking dish and cover with aluminum foil.
9. Bake for 1 hour; uncover and bake for another 15 minutes. Let stand and cool for 15 minutes before cutting.

what i do is so super simple. buy the barilla lasagna noodles, u dont have to cook them. in a frying pan, brown meat with a little onion if you want, salt and pepper to taste. then add 2 jars of spaghetti sauce whatever you got, and then i usually fill one jar with water and put that in there too. simmer that for about 20 minutes or so, less if your in a hurry.
meanwhile, in a bowl combine a container of ricotta, half a package of shredded kraft mozz, few shakes parmesan and an egg.
then in baking dish put a little sauce on bottom, then a layer of noodles. on that put a few plops of cheese mixture, then ladels of sauce, repeat. end with just sauce on the top, no cheese mix. then u can sprinkle mozz and parm cheese over top and cover with foil. bake at 375 for about 40-45 minutes. remove foil and add a little more cheese to top bake another 5-10 min uncovered. just dont dry out.
this is soooo easy and super yum. after you master that you could get fancy if you like, but ive made mine this way for many dinners for guests and they all ask how i made it.

The quickest way that I have ever run across is to substitute cheese ravioli for the noodles and some of the mozzarella. It is very yummy and very, very easy.

cook the noodles
cook the meat, mix with sauce
layer it, add meat& cheese each layer.
microwave for 20 minutes.
