Christians "accept" the beginning of the Old Testament in part because it shows the alienation of Man from God that Jesus is expected to repair. Similarly, the Torah anticipates the arrival of a Messiah.

Therefore, from a Christian point of view, the Torah is a reinforcement of the validity of the Christian belief, although, Christianity also creates the "New Covenant in Christ" that dissolves many of the restrictions of the Torah.

Jews who became Christians actually believe the Trinity. The Torah speaks of God's three-fold unity in many places. For example, see Genesis 1, where at the creation God (The initiator, father) spoke, and His Word (the Son) was the vehicle through which all things were made; all the while the Spirit of God was "hovering over the deep", by Whose power all things were made. Torah was a foreshadowing of what was to come -- Jesus. The Torah, though true, is incomplete without Jesus. Everything in Torah points to Yeshua (Jesus). Jesus' sacrifice on the Cross was the fulfillment of the Law which is the Torah

In the Torah, God is often times spoken of in the plural. "Let us make man in our image". These verses are useful when backing up the Trinity.

Can't really blame a person for saying it contradicts when they say things like that and then quote verses that emphatically state that God is One. A TRInity is not One. No matter how you slice it.
