Im Cooking a 1 pound rost in the oven, and at what temp??

Roast at 325 degrees but don't depend on time. Internal temperature is the only way to do it! Roast to an internal temperature of 145-150 degrees, then let it rest 20 minutes outside the oven. The temperature will rise another 5-10 degrees.

The meat will still be a little pink but that's ok -- trichnosis has not been a problem or decades and today's lean pork gets dry and awful much above 150 degrees. You will find recommendations that suggest as high as 180 degrees! Don't do it!! That's obsolete advice and the meat will be awful.

Oh, one more thing: Brine the meat. Soak for 2-4 hours in 1/2 cup salt and 1/2 cup sugar in a quart or two of water. Rinse well, dry well, then roast.

If it's boneless, it should take about 20 minutes at 350 degrees.
