I am making homade tamales and hope to prepare both batches early, the first even earlier (duh). I don't want them to dry out and would prefer not to re-heat... but this might be the best way. If I should reheat, please include how. Thanks!

Well I usually make about 12-24 dozen at a time. I let them cool. Put in zip loc bags (if I'm going to eat within a month) freeze some, and what I'm going to eat within 3 days, I put in the refrigerator. When ready to serve I put them in the microwave till they get to the temperature I want. Then serve.

Please note my wrapper is corn husk, with Masa, meat or treat. I don't think this will work very well if you are using banana, or other leaves. They will turn black when you reheat them.

Sorry you may not have the microwave or freezer.
OK they will keep in the refrigerator for about 3 days. You can keep the first batch in the oven on warm. If you have 4 hours before the second batch is finished steaming. Wrap them in foil, or put in a airtight container till you are ready with the second batch. Then put on a cookie sheet and warm them up to coincide with the timing of the second batch.

Try keeping them warm in a crock pot. Just turn the temperature down to low and it will keep the tamales nice and warm for as long as you need. A crock pot is a great investment, if you don't already have one. I've seen them as cheap as $20 on up. Depends on the size of the crock pot you want.
