I wrapped it in plastic wrap 5 x so that I can freeze it and use it later as an ice cube in my martini. Did I overwrap it?

You gave way too much protection... As with most fruit they need air to crystalize and harden that cherry... So expose that cherry of yours and let it harden

your cherry is tight cause you didn't use the popper i mean proper technique when unwraping the cherry if you need some help i practice unpopping, i mean un wraping cherrys many times
