Yes but it would have to be a low wattage light - most likely a night light - or to be even safer
Use an automotive generator that is spun by the waterwheel giving you 12 volts, then light 12 volt bulbs with it. 12 volts is quite safe

Yeah, you can get a simple generator kit from Radio Shack or Edmund Scientific, or you can wind your own, if you have the time. You'll have to arrive at a reasonable gearing for the driven element - the waterwheel, to spin the thing fast enough, but it should be easy, and very safe.

No, I'm thinking a flashlight bulb - and a MUCH smaller generator. A car generator requires about 1-2 horsepower - that's a LOT of water flow.
