Usually, I make a homemade white sauce and add shredded sharp Cheddar:

Melt 2 tablespoons butter, and add 2 tablespoons flour. Cook together for a few minutes, add 1 cup shredded Cheddar, and let cheese melt. Slowly add1 cup of milk, stirring continuously until sauce reaches desired consistency. Season with salt and white pepper.

However, I *will* confess that if time is short, I toss in a hunk of Velveeta with the broccoli and stir like a maniac until it's melted. I guess I will be the next one to "pack my knives and go home," eh?

No Top Chef award for me. ;-)

you make a kinds mornay sauce.

heat up some oil or butter. And equal part flour, cookin' the flour into a paste for about 1 minutes. slowly whisk in your milk. Then little by little add your cheese. Because if you add it all at one, it will break your sauce. and make sure you do all of this on low-medium heat. Slowly melt your cheese in the sauce, then add more cheese. then season with you fave spices.

to get creative though. you can probably do combinations of these other cheese: pepper jack or parmesan with your cheddar, or maybe even white cheddar.

but take the sauce and pour it over your broccoli that's in a bakin' dish. sprinkle lil bit more cheese and crumbs if you like and place in the oven, and heat up and melt the cheese and take out when the top is nice and golden.

the blocks of velveeta cheese. here's what you do:

cut the cheese into 1/2 inch squares and place them in a microwave safe bowl.
microwave for about 45 seconds or longer if you are making a lot.
then pour the cheese into a small pot and add about 1/4 to 1/3 cup of milk until it comes to a creamier consistancy.
then add your (already cooked) broccoli

I think a cheddar cheese sauce is yummy. You might also try white cheddar or if you're up for a challenge a hollandaise sauce (you can buy a mix for this at a grocery store).

I use either velveeta or shredded chedder, colby jack mix with a little milk melted and poured over the broccoli. Its YUMMMY!!!

American, Cheddar, or Muenster mixed w/ American or Cheddar.

Many ppl like Velveeta b/c it melts smothly.
