What do you think about the controversy around the exhibit?

a)People might have wanted their organs to have been donated to patients in need, instead of plastination, and b) - That plastination should really be considered medical research as well, because it helps many people learn about the human body.

It would depend on the intention of the donor and/or their relatives, and on whether or not the body was suitable for transplant parts.
If a person, or their relatives, donated the body for transplant parts, that would be a preferred use of the body, IMO.
However, not all bodies are suitable for transplant parts, and using cadavers to train future doctors and scientists is an honorable use of the body as well.
