Blue cheese is technically already going bad, hence the blue mold. Yes, that's what that is. When the cheese flavor is to intense or starts tasting really fungal, it should go.

i've not seen a bad blue cheese before...so i don't know what a bad blue cheese would look like. i think u just have to know the expiration date.

when cheese go bad, it creates a different odor, or a white mold rind on the out side, and even the taste can change. or if it begins to crack due to lost of moisture.
i say the bes way to keep cheese, it keep it in it's original wrapper or even better, wrap in deli parchment paper. wich allows it to breath and not sufficate.
