Cauliflower gratin: Cauliflower, cream, goat cheese, monterey jack. Mix and bake. Yum

Pizza with goat cheese, figs, carmelized onions. (Note I use fresh figs on mine and do not cook with onions)

Penne with Sun Dried Tomatoes, Shitake Mushrooms
and Goat Cheese

Ingredients:
1 pound penne, reserve 1 cup of the cooking water
1 cup sun dried tomatoes packed in oil, cut in julienne
1 cup shitake mushrooms, stems removed and cut in julienne slices
1/4 cup extra virgin olive oil
4 cloves garlic, sliced thin
1/2 teaspoon crushed red pepper or to taste
1 cup white wine
2 cups chicken stock
2 cups fresh *arugula, cut into thin julienne
3 ounces Redwood Hill Farm Chevre
Salt and pepper to taste


Method:
Drain tomatoes reserving oil, cut into julienne if necessary. Add enough olive oil to the reserved oil to make 1/4 cup. In a large frying pan sauté the tomatoes, mushrooms and garlic for 2 to 3 minutes or until mushrooms are lightly cooked, be careful not to burn the garlic. Add wine and reduce by half. Add chicken stock and cook for 10 minutes longer. Meanwhile cook the penne according to package directions for al dente. Remove the sauce from the heat and add goat cheese, mixing until well combined. Add the drained pasta and arugula and mix until well incorporated. Add salt and pepper to taste. If the sauce seems a little dry, add some of the reserved pasta water, about 1/4 cup at a time until sauce is moist and creamy.

* Spinach can be substituted for the arugula. You can also alter the taste by substituting 1/2 cup chopped fresh basil for the 2 cups of other greens.

I have this recipe printed from the site below, they have the BEST recipes, and they are fairly easy! Great to have for family (especially the inlaws!!!)

GOAT CHEESE, GRAPE, & WALNUT SALAD

bagged baby Spring Mix Greens
green grapes
peppered goat cheese
walnut halves
Marzetti's honey mustard salad dressing
freshly ground black pepper

First, grind a little black pepper onto bottom of each salad bowl, and then add Baby Spring Mix Greens.
Sprinkle on grapes, walnuts, and hunks of goat cheese. Dress with Marzetti's Honey Mustard Dressing.

I like to make a simple spread of goat cheese with chives mixed in and then I put it on toasted pieces of french baguette. It makes a really great snack.

i'm a chef and that i hate goat cheese, too. I might desire to apply it each and all of the time (simply by fact loopy people like it). i might attempt feta or in basic terms some shaved pecorino romano (shaved from a block with a vegetable peeler). do no longer understand relating to something of the dish, yet those are risk-free bets.

Roasted Eggplant Soup
1¼ hours 20 min prep 1 Batch

3 medium tomatoes, halved
1 (1 1/2 lb) eggplant, halved lengthwise
1 small onion, halved
6 garlic cloves, peeled
2 tablespoons vegetable oil
1 tablespoon fresh thyme, chopped or 1 teaspoon dried thyme, chopped
4 cups chicken stock or low sodium chicken broth (or more)
1 cup whipping cream
3/4 cup goat cheese, crumbled

Preheat oven to 400°F.
Place tomatoes, eggplant, onion and garlic on large baking sheet. Brush vegetables with oil. Roast until vegetables are tender and brown in spots, about 45 minutes.
Remove from oven.
Scoop eggplant from skin into heavy large saucepan; discard skin. Add remaining roasted vegetables and thyme to same saucepan.
Add 4 cups chicken stock and bring to boil. Reduce heat to simmer. Cook until onion is very tender, about 45 minutes.
Cool slightly.
Working in batches, puree soup in blender until smooth. Return soup to saucepan.
Stir in cream. Bring to simmer, thinning with more stock, if desired.
Season soup with salt and pepper. Ladle into bowls.
Sprinkle with goat cheese; serve.
