White meat, but cooked in something spicy

I love this dish I make for my family, it is so EASY and it is so GOOD!
Make some white rice (or brown, if you prefer).
Meanwhile,
Cook some chicken (about 2-3 lbs, or, 3-4 breasts). This can be done in the "George Foreman" grill or on the stove, in a skillet. If the latter, then use some extra virgin olive oil to brown it up while it cooks thoroughly...
When it is ALMOST done, take a can or Campbell's Southwestern soup (or another brand)...and pour on top. Fill up the can 1/2 way with water, and mix in. Stir up and then let simmer for about 12-15 minutes...till the chicken is cooked all the way. I usually add a bit of seasonings, like a little season salt or garlic/onion powder...then I serve over the rice! It has veggies in it, and it is wonderful on a cold night. ENJOY!

Mine is smoked chicken!!

1 whole chicken
1/4 cup liquid smoke

Rinse chicken inside and out, and pat dry.
Place in crock pot, breast side down.
Pour liquid smoke over top.
Cover and cook on low until done, about 10 hours, or until chicken is cooked to desired tenderness. (some crock pots cook faster than others, even on low).
Edited on 10/5/04 to add: If desired, salt your chicken inside and out before placing in crock pot. I've recently learned that some liquid smoke has added ingredients, and that will also affect the results -- the kind I use is only "water and smoke." Also, cooking times vary with different crock pots and with the size of your chicken. When I prepare this, I use a chicken weighing between 4 and 4 1/2 pounds. Your chicken may be done in less than 10 hours -- use your judgement based on past experience with your crock pot.

I like broasted chicken. If pressure fryers weren't so expensive, I'd try doing a pressure fried Cornish hen.
