you need an egg. either some bread crumbs, smashed up crackers or chopped up little bits of bread. a little salt and pepper. some ketchup or tomato soup. That's all you need.
for a 2 pound loaf. 2 pounds of meat, cup of bread crumbs, 2 eggs, pinch of salt and pepper and 1/2 cup of ketchup.
if you want you can add some little bits of green pepper you can.

This is my recipe, and it's about as easy as easy ever gets: 1 1/2 pound hamburger 4 slices of bread, finely crumbled 1 egg 1/2 tsp. onion salt 1/2 tsp. garlic salt 1/2 tsp. parsley 2 tablespoons Worchestershire sauce 2 tablespoons ketchup or barbecue sauce Extra ketchup or barbecue sauce for topping Mix all ingredients together, and place in a loaf pan. Bake at 350 degrees for 45 minutes to 1 hour, or until meat loaf is done. Pour off the accumulated grease from time to time, using a spatula to hold the meatloaf down as you drain the grease. About ten minutes before you think the meat loaf is done, top with ketchup or barbecue sauce and return to the oven long enough to form a glaze.

Old-fashioned Meat Loaf- A.K.A "Basic" Meatloaf
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper

8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

These are the ingredients I usually pick and choose from when making a meatloaf from scratch. I don't have a set recipe, but I get compliments every time. :)
Take one pound of either lean ground beef or ground turkey and mix it with one beaten egg. This will prevent it from becoming overly dried out and crumbly. Mix in a combination of the following, based on what you have on hand as well as whatever sound good to you at the time:
to add a savory richness to it:
-worcestershire sauce
-steak sauce
-teriyaki sauce
-'duck sauce' or a sweet-sour type sauce
The first two work well together; the last two less so.
for some crunchy veggie goodness:
-diced onion or scallions
-garlic, minced or roughly chopped
for the spices:
-powdered beef boullion
-garlic salt or powder
-onion salt or powder
-pepper [freshly cracked is best]
-fine kosher salt or sea salt
-jalapeno salt or crushed red pepper [for the brave!]
I once crushed up a pack of ramen and threw that in as well, along with the seasoning packet. It was pretty good!
Many people like adding ketchup, but I usually find that this is a little overwhelming. Makes it taste too much like a hamburger, too, in my opinion. :) If you are looking for that little bit of tang, start by adding a little bit at a time to your liking. You don't want it to look gooey, and the result shouldn't look too red.
Breadcrumbs are common too - I recommend a 1/4 cup of cornflake crumbs if you can find them. Just remember that this will take away from the juiciness of the end product.
Spread into a loaf pan [long rectangluar one.] Bake at 375 F for an hour, or until a toothpick inserted into the center comes out dry/crumb-free.
Trust your tastebuds - just don't go overboard!

Makes: 8 servings
2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided
PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.

Cheddar Meat loaf

1 cup cheddar cheese, divided
2/3 cup ketchup
1/4 cup brown sugar
1 teaspoon mustard
Preheat oven to 375°F.
In large bowl, beat eggs with milk.
Stir in 2/3 cup of cheese, oats, bread crumbs and onion.
Add meat and mix well.
Scoop into loaf pan.
In a small bowl, mix ketchup, brown sugar and mustard.
Spoon over loaf.
Bake 1 hour.
Sprinkle remaining 1/3c. cheese on top and return to oven until cheese is melted.
