can you give me step by step instructions, ingredients, what cooking to use (stove top, oven, etc), etc

3 C white rice(made a day ahead-cooled, covered, then refrigerated)
3 T olive oil
1 finely diced clove o' garlic
3/4 C frozen peas and carrots
1/4 C finely diced sweet onion
1/3 C diced BBQ pork
soy sauce (to taste)
2 soft scrambled eggs
fresh ground pepper (to taste)
fresh green onion-chopped for garnish

preheat a large saute pan to medium high heat.
break up your cold white rice and set aside.
put oil in pan. throw in garlic. simmer til lightly browned. toss in peas and carrots and sweet onion. saute for 2 minutes.
add pork, saute for 1 min. then add the rice. combine....
add soy sauce to taste(some add more than others...) mix and incorporate, but do not smash up the rice.
finally, add the eggs. then add the pepper to taste and garnish with the green onion.

Traditional Mandarin Fried Rice
Canola oil
3 eggs
2 tablespoons minced garlic
2 tablespoons minced ginger
1 bunch chopped scallions, green and white separated
1 lapchang, diced (Chinese sausage), can substitute with 4 strips of cooked bacon
8 cups cooked, day old long grain rice
3 tablespoons thin soy sauce
1/2 teaspoon white pepper
Salt to taste

It is recommended to use day old rice so that the drier rice can soak up the flavors. In a wok, add 2 tablespoons of oil and quickly soft-scramble the eggs. Remove the eggs. In the same wok, coat with oil and stir-fry garlic and ginger. Add white scallions and lapchang. Add rice and mix thoroughly. Add soy sauce, white pepper and scrambled eggs. Check for seasoning. Serve immediately.

Fried rice is delicious, and amazing as well !

2 eggs, beaten.
1 cup thawed frozen carrots and peas.
Any meat of your choice, about 3/4 cup.
Olive oil.
One scallion, chopped.
About 4 cups of COOKED rice.
Salt and pepper, to taste.
Soy sauce, if desired.

Heat a frying pan under medium heat. Add about one tablespoon of olive oil. Add the beaten eggs and scramble it, but not thoroughly. It will finish cooking later on.

Heat a frying pan under medium heat. Add about 4 tablespoons of olive oil. Throw in the chopped scallion and saute for about a minute. Add the diced meat and saute it for about two minutes. Add the rice and stir that up with a big spatula. Add the veggies and eggs and fry until the eggs are done. Add soy sauce, if desired and salt and pepper to taste.

Serve up in a big bowl topped with more scallions.

You cook rice first, the use that rice to fry later. Or you can use leftover rice to make fried rice. I do this way. (rice is always cooked first)

Put the some oil into a hot pan, put some garlic until it turn brown, then put the cooked rice in.

Next, put all of your favorite ingredient (egg, meat, sausage, Seasoning, pepper, etc) and mix them with the rice until the rice turn brown or smell good.

That is it, and it is the way Asian make fried rice.

Try this one

3 cups rice
2 eggs, lightly beaten
2 tablespoons cooking oil
1 teaspoon sesame oil
1 teaspoon chopped garlic
100 g prawns, shelled and diced
2 dried Chinese mushrooms, soaked and shredded
2 links sausage, sliced
2 tablespoons frozen green peas
Seasoning
1 tablespoon premium oyster sauce
1 tablespoon light soy sauce
1/4 teaspoon salt
1/8 teaspoon pepper
sugar
1/2 teaspoon chicken stock

Heat oil in wok and fry beaten eggs.
Remove and set aside.
Reheat wok with 3-4tbs cooking oil til
smoking hot, add garlic and fry til golden and fragrant. Add prawns, mushrooms and sausages. Stir for a minute. Add in rice & mixed in seasoning & green peas. Stir briskly to mix ingredients. Add sesame oil to glaze the rice.Return egges to wok and mix well to blend.

Here's a link to a basic recipe. Hint: One of the best ingredients is to use day old rice. Not fresh rice. That is essentially how "Fried Rice" was created...from leftovers.
