ect. Is it real alcohol? Because I see a lot of recipies made that say to add cooking sherry or cooking wine ect BUT my father was an alcholoic and I'd be terrified of trying any not knowing for sure what would/could happen..

Firstly, yes it is real alcohol in cooking wine and sherry. No you will not get drunk on it BUT all the alcohol DOES NOT evaporate. There will still be some left. As for the manufactured fish, the Gordon's beer batter fish, I highly doubt it has any real beer in it. As someone who has worked in a hospital and dealt with recovering alcoholics very regularly, I would avoid using any "Cooking wine" or any other kind of alcohol in your cooking. Although there will not be enough there to get your father drunk, the mere taste of it could cause him to have a relapse. You sound very concerned for your dad so I would avoid this possibility altogether. You can use spices and herbs, along with any kind of broth to enhance the flavour of food very easily. Also, as mentioned by anotehr poster, any kind of "cooking" alcohol is VERY high in salt, and actually very dangerous for your health. I have seen clients who drink this stuff when they can not afford the "real" stuff and they look like blow fish they are so bloated afterward. Very deadly stuff, if you are cooking on your own just use a little of what ever wine you are serving in the recipe and this will enhance the flavours of the food and tie in nicely with your choice of wine with dinner. Cooking wine does contain alcohol, but it generally cooks off (alcohol evaporates at fairly low temperatures). You may be left with the flavor of the wine, but not the effect (or taste) of the alcohol. The only real difference (besides quality) between cooking wine and table wine is that cooking wine is salted. If you're using "cooking" wine, reduce the amount of salt you use.

When cooking with wine, beer etc. The alcohol will burn off during the cooking process. So it should be fine, nobody gets drunk from eating food cooked in this manner.

It's real, but the alcohol itself cooks out. All it does is give the food a certain flavor. FYI, that Gordons beer batter fish is good ;).
