I found that Ranch dressing rocks with spinach. I like doing this to make a complete salad. The following can be served as either a side or main dish depending on the serving size you offer...
layer in a casserole baby spinach, cooked and cooled tortellini, crumbled bacon, and thin sliced red onion. Serve with ranch dressing. Yum!

Sweet Honey Dressing
1 T Honey
2 T White Wine Vinegar
1/4 C Extra-Virgin Olive Oil
2 Sprigs Fresh Dill, Chopped
Salt & Pepper
Mix all together in the honey bear bottle.

probably a ranch because the spinach leaves can be bitter and you don't want a bitter dressing like a vinaigrette or an italian dressing. something thick with a strong, hearty flavor.

some kind of an oil based dressing, like italian, a vinegarette or a oil/vinegar dressing. you can make your own with a little balsamic vinegar and some olive oil just whisk and pour over salad and mix and serve.
