To get the real carrot taste in Carrot Cake, you're best using fresh carrots and more of them. Fresh carrots have more flavor as carrots that are NOT fresh, lose their flavor quicker. Alot like soda. Drinking it when it's just opened tastes better compared to a soda that has been 3 days ago.

The sugar and other spices overwhelm the natural flavor of the carrot. It also helps that carrots are naturally sweet. A similar thing happens in Australia with another root vegetable/cake concoction - a chocolate beetroot cake.

The shredded carrots vanish somewhat and leave colour and a streak of them. The cooked carrots have a sweet taste similar to caramelised carrots but not like carrots.

Just like all other vegetables they loose their flavour when they're boiled or cooked. Only the sweet taste is left behind and that is something that you cannot provide to your cake by adding sugar.....
