The bottle thing makes me think desert island as well. I would use sand and shells, maybe have some palm trees as well.
For favors, maybe a small vintage bottle from the flea market with a thank you note inside tied with a ribbon, maybe add a sea shell. Or sea shell soaps or chocolate.
Muted colors, like aqua, blues, greens, or silvers go great with a beach theme, or you could go tropical island looking, with bright colors. Decorate the tables with grass skirts! Tiki bar for buffet? Shells, fish, polished stones, and sand , maybe mixed with a little glitter for sparkle. Betta fish or goldfish in bowls on the tables. As a bonus, you can play games or draw names or have a secret seat for who gets to take the fish home for a pet.
Look at the $1 store for cheap decor. We used mirrors and mosaics to put the candles on.

For a centerpiece, you could go to a local store like Michaels, Wal-Mart, etc., and see if you can find a large glass looking bottle(vase) that is clear. Put a little bit of sand in the bottom maybe along with a few small sea shells. Have a copy of your wedding invitation or announcement blown up and have it carefully inserted to the bottle so that it can be read from the front. Use that as a centerpiece with candles that are inside glass containers. The larger 'bottle' can be set up higher with the candle containers down around the lower edge, maybe with some sea shells or flowers in between, or pretty bows. As far as favors, you could have those little champagne party poppers! They are not really cheesy, they are fun! If it's more of something for the guests to take home as a rememberence....little bottles of sand....with a piece of ribbon around the top.

First of all, Congratulations! What a special time - even if it's a bit hectic :D
Why don't you do square mirrors in the center of the tables (they'll pick up the candlelight and send it around the room) and sprinkle sand on them. Then put three candles on them in your colors a tall thinner candle, short stubbier candle, and a short squat candle. Then arrange bottles around the candles in the sand. You could make up labels with a saying or quote that means something to you both, your names, and the wedding date and add them to the bottles (on clear address labels). You could add seashells or twine or anything that could add to the "message in a bottle" theme. You could even do a thank you for sharing this day with us message on vellum rolled up in the bottle as favors to take home with them. I love personalized favors like that.

A zen garden with a candle in the middle would make a pretty (and interesting) centerpiece. Colored sand or sea salts in a simple jar tied with a ribbon would make a beautiful favor.

I did floating candles in a water bowl. When they dimmed the lights to show our wedding video it made the room have a soft glow. For favors I did the floating candles with bath rose petals because I had roses as our flowers.
