The dragon represents the emperor, the phoenix eternal life. This is supposed to give the emperor immortality.

It really doesn't have much significant symbolism. I think it's more a matter of aesthetic if you want a koi as well. However, dragon and the phoenix have been commonly used for chinese weddings. As in the past, the emperor was refered to as the dragon and the empress, phoenix. Hence, having it to symbolise the couple is a blessing that it's a match made in heaven.

I had tried one of those cold/hot dishes as an appetizer with all the cold meat decorated into the shape of a dragon and all the hot meat in the shape of a phoenix like some yin and yang plate. I had also been to a few common dragon (loong) and phoenix (forng) chinese restaurants. Its just a creative and auspicious name commonly used to symbolize happiness and prosperity for restaurants' names or even chinese dishes to depict or symbolize a dish for weddings, Chinese New Year, auspicious celebrations etc. You need to describe your dish in more details *

I don't know what it will symbolise when you put side to side except happiness in marriage.
For Chinese, dragons represent the males; domineering, in control and respected. As for pheonix, it represents the females; elegant, gentle and pretty. So unity begins when both dragon and pheonix are together. But if you want to put, it would be best to put pheonix on right and dragon on left as guys are symbolise by left and female by right.

Im Asian, usually it mean good lucks and happiness. Some Chinese or Vietnamese restaurant have that symbol.
